OATMEAL COOKIES
1c. shortening; 1c. granulated sugar; 1c. packed brown sugar; 2 large eggs; 1tsp. vanilla extract; 1 1/2c. flour; 1tsp. baking soda; 1tsp. ground nutmeg; 1tsp. ground cinnamon; 1tsp. salt; 1c. chopped pecans; 6c. regular uncooked oats
Cream shortening and sugars until light. Add eggs and vanilla and beat well. Add remaining ingredients and mix well. Scale at 2 1/2 oz. onto parchment paper. Bake at 350° until light brown but still somewhat moist in the center. MAKES 24 2 1/2oz. COOKIES
