RHUBARB CAKE
1/2c. shortening; 1 1/2c. brown sugar; 1 egg; 1c. buttermilk; 1tsp. soda; 2c. flour; 1 1/2c. raw rhubarb, cut in 1/2-inch pieces; 1/2c. white sugar; 1/2tsp. cinnamon
Cream shortening and brown sugar. Add egg. Sift soda with flour; add dry ingredients along with milk. Fold in rhubarb. Grease and flour 8x12 inch pan and spread in batter. Sprinkle top with mixture of white sugar and cinnamon. Bake at 350°, 30-35 minutes. SERVES 12
