SPAM Recipes




SPAM Breakfast Burritos


1 (12-ounce) can SPAM, cubed
4 eggs
2 tablespoons milk
1 tablespoon butter
6 (6-inch) flour tortillas
1 cup shredded Cheddar cheese, divided
1 cup shredded Monterey Jack cheese, divided
salsa

Heat oven to 400 degrees. In bowl, beat together
SPAM, eggs, and milk. Melt butter in large skillet;
add egg mixture. Cook, stirring, to desired doneness.
Fill each tortilla with SPAM and egg mixture and half
of the cheeses. Roll burrito; place seam side down on
12x8-inch baking dish. Sprinkle with remaining cheese.
Bake 5 to 10 minutes or until cheese is melted. Serve
with salsa. Makes 6 servings.

SPAM & Broccoli with Pasta


6 ounces uncooked fettucini
1 (12-ounce) can SPAM, cubed
1 1/2 cups fresh or frozen broccoli florets
1 small onion, sliced; slices cut in half
1 tablespoon butter or margarine
1 (10-ounce) package refrigerated alfredo sauce

Cook pasta according to package directions. In large
skillet, sauté SPAM, broccoli, and onion in butter until
SPAM is lightly browned and broccoli is crisply tender.
Stir in alfredo sauce. Cook, stirring constantly, until
sauce is thoroughly heated. Serve over hot cooked pasta.
Serves 6.

SPAM Hashbrown Casserole


1 (32-ounce) package frozen hashbrown potatoes, thawed slightly
1/2 cup butter or margarine, melted
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon garlic powder
2 cups shredded Cheddar cheese
1 (12-ounce) can SPAM, cubed
1 can cream of mushroom soup
1 1/2 cups sour cream
1/2 cup milk
1/2 cup chopped onion

Heat oven to 350 degrees. In large bowl, combine potatoes,
melted butter, salt, pepper, and garlic powder. In another
bowl,combine cheese, SPAM, soup, sour cream, milk, and onion.
Add SPAM mixture to potato mixture; mix well. Pour into
2-quart baking dish. Bake 45 to 60 minutes or until
thoroughly heated. Serves 8.

SPAM Nachos


1 (10-ounce) bag tortilla chips
1 (12-ounce) can SPAM, cubed
1 (15-ounce) can refried beans
1 (16-ounce) jar salsa
1 (8-ounce) package shredded cheese
optional: chopped onions, sliced black olives, diced tomatoes

Heat oven to 425 degrees. Place chips on baking sheet.
Sprinkle SPAM over chips. In bowl, combine refried beans
and salsa; pour over chips. Sprinkle with cheese and any
optional ingredients you choose. Bake 6 to 7 minutes or
until cheese is melted. Serve immediately.
Makes 10 appetizer servings.

SPAM Pizza Appetizer


1 tablespoon butter or margarine
1 cup chopped broccoli
1 cup cubed SPAM
1 cup prepared spinach dip
1 (10 ounce) package prebaked pizza crust
1/3 cup chopped green onions
1 tomato, seeded and chopped

Sauté SPAM and broccoli in butter until SPAM is lightly
browned. Spread spinach dip evenly over the pizza crust to
within 1/2 inch of the edge. Top with broccoli, SPAM, green
onions and tomato. Cut into wedges to serve.

SPAM Potato Casserole


1 can cream of potato soup
1/4 cup grated Parmesan cheese, divided
2 tablespoons sherry
4 cups hot prepared mashed potatoes
vegetable cooking spray
12 ounce can SPAM, cut into small pieces
1/4 teaspoon paprika

Heat oven to 425 degrees. Combine soup, 2 tablespoons
cheese, and sherry; stir until smooth. Spoon mashed
potatoes into 1 1/2-quart casserole dish sprayed with
cooking spray. Sprinkle SPAM on top of potatoes. Spread
soup mixture over SPAM. Sprinkle remaining 2 tablespoons
cheese and paprika over soup. Bake 20 minutes or until
thoroughly heated. Serves 8.

SPAM Quesadillas


1/2 cup chopped onion
1/2 cup sliced black olives
12 (7-inch) flour tortillas
1 (12-ounce) can SPAM, cut into 1/4-inch slices
12 (1-ounce) slices Mozzarella or Monterey Jack cheese

On one quarter of each tortilla, place 1 slice SPAM
and 1 slice cheese. Sprinkle with about 1 tablespoon
olives and onion. Fold tortilla in half and in half again.
In heavy skillet over medium-high heat, cook 4 tortillas
at a time. Cook 2 to 3 minutes per side or until crisp.

SPAM Reuben Potatoes


4 large baking potatoes
Cooking oil
1 (7-ounce) can SPAM, diced
1/2 cup sauerkraut, rinsed and drained
1/2 cup shredded Swiss cheese

Wash potatoes well; rub with cooking oil. Bake at
425 degrees for 45 minutes or until tender. Remove
from oven; cut a cross in top and push ends together
to open. Toss SPAM with sauerkraut. Mound SPAM mixture
on top of potatoes; sprinkle with cheese. Return to
oven for 5 to 7 minutes until SPAM is hot and cheese melts.

SPAMloaf


1 (12-ounce) can SPAM
1 pound ground beef
1 medium onion, chopped
1/4 cup barbecue sauce
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
2 eggs
1/3 cup dry bread crumbs

Grind SPAM or process in food processor using chopping blade.
Combine with remaining ingredients; mix well. Shape into loaf.
Bake at 375 degrees for 1 hour. Let stand 5 minutes before slicing.
