GREEN BEAN CASSEROLE


1-1/2 to 2 pounds fresh green beans, trimmed and snapped

2-3 white mushrooms, 3/4 inch dice

1 can condensed cream of mushroom soup

3 oz. sharp cheddar cheese, shredded

2 strips bacon, fried and crumbled

3 oz. packaged French fried onions


Preheat oven to 325 degrees.

Place beans and diced mushrooms in a medium pan. Cover with water and bring to a boil. Reduce heat, cover and simmer for 8-10 minutes. Remove from heat and drain.

Heat the undiluted cream of mushroom soup in a saucepan over medium heat. Stir in the shredded cheese and bacon, and continue stirring until completely melted. Remove from the heat, pour over the green beans and mushrooms, stirring until evenly coated. Pour the mixture into a casserole dish and top with the fried onions, leaving a 1 inch margin around the sides.

Bake for 25 to 30 minutes in the preheated oven, until heated through and bubbly. Check near the end of cooking to make sure the onions aren't getting too brown.
