Brian's Chocolate Mint Cookies

Desert # 5

  • 1/2 cup Butter -- unsalted
  • 1 cup Granulated sugar
  • 1 lg Egg -- beaten
  • 1/2 tsp Vanilla extract
  • 1/2 tsp Mint extract
  • 1/2 c Flour -- unbleached
  • 1/4 tsp Salt
  • 1/2 tsp Baking powder -- double-acting
  • 2oz Chocolate -- unsweetened
  • Non-paralleils -- multi-colored
  • 2 teaspoons Water
Beat butter until soft; gradually add sugar & blend until creamy. Mix in beaten egg & extracts. DON'T USE FOOD PROCESSOR!!! Stir salt & baking powder into flour; stir into butter/sugar mixture. Melt chocolate in water over double-boiler; add to dough. Form into long roll approx 2"-3" wide. Wrap dough with plastic wrap & chill overnight. Slice dough 1/4" thick & place on greased cookie sheet. Sprinkle with non-paralleils & press in slightly with back of spoon. Bake 400 oven for 8-10 min. Cool cookies on rack. Can substitute 3 oz semi-sweet chips for chocolate.
