angelwee's favorite recipes
Here is some of my favorite recipes and some that
other people have given me.
DESSERTS
Pumpkin Cookies
3 cups of sugar
2 well beaten eggs
29 oz can of pumpkin
2 tsp vanilla
2 tsp baking soda
2tsp baking powder
2 tsp cinnamon
2tsp nutmeg or pumpkin spice
1 tsp salt
1 cup shortening
4 half cups of flour
Bake on 350 degree oven for approximately 15 minutes
optional:
chocolate chips,nuts
Sugar Cookies
Ingredients: 4 cups flour
2 cups sugar
4 eggs
2 tsp. soda
2 tsp. vanilla
2 cubes of margarine
Directions:Mix the margarine, eggs, vanilla and beat
with a mixer. Add soda and mix well. Add flour 2 cups
at a time. Chill the dough as is makes it easier to
work with. Then roll with a rolling pin on a floured
board and cut into shapes. This dough freezes well
for later use.

Raisin filling for raisin cookies:
2# or raisins,
the juice of one lemon.
2 Teaspoons of vanilla.
1\4 cup of orange juice
2 teaspoons of cinnamon.
Add 2 cups of water and 1 cup of sugar.
Cook for about 30 to 40 minutes. Thicken with
cornstarch. After the
filling has cooled, put the raisin mixture in a food
processor and chop the mixture into a thick filling.
Add nuts if desired. Let cool. Roll out sugar cooke
dough. Cut circles, put filling on the bottom and add
the top. Put on greased cookie sheet.(about six
cookies to a cookie sheet) Cook for 30 minutes at 350
in a preheated oven. Cool on cooling racks.
Orange caramels
2 cups of sugar
2 cups light corn syrup
half cup butter(real butter)
1 cup of cream
6 oz can orange juice
Mix sugar , corn syrup, salt, and orange juice in a
large heavy pan.
Bring to a boil over a moderate heat.Stir
occasionally and cook until 235 degree on a candy
thermometer. Add butter and cream gradually so that
candy never stops boiling.
Continue cooking over high heat stirring constantly
until 240 degree.
Pour into well buttered pan and let cook cut into
square and wrap with wax paper.
Wedding Cookies
Ingredients: 1 1/2 cup sugar
4 1/2 cup flour
1 tsp. vanilla
2 sticks of butter (room temperature)
walnuts
Choclate chip (optional)
Directions: Mix walnuts, butter at romm temperature:
Add
sugar and flour to smooth dough. Shape teaspoons full
into small balls. Bake on a cookie sheet 15 to 18
minutes at
350. Roll in powdered sugar while hot. (chocolate
chips
made be added if you like)
Peanut Butter Cookies
Ingredients: 3 cups flour
2 t. soda
1\4 t. salt
1 cup margarine
1 cup sugar
1 cup brown sugar
2 eggs
1 cup of peanut butter
Directions: Mix margarine, sugar both brown and
white, eggs,
peanut butter. Add soda and salt (if desired). Add
one teaspoon of vanilla. Beat this with a mixer to
make a creamy texture. Add flour. Make into small
balls and push down with a fork. Bake at 350 for
about 14 minutes.
Chocolate Fudge Brownies
Ingredients: 2 eggs beaten well
1 cube of melted margarine
6 tbs. of cocoa
1 tsp vanilla
1 cup flour
dash of salt
l cup of sugar
Directions: Mix the first three ingredients.
Gradually add
1 cup of sugar, and the vanilla. To this chocolate
mixture add l cup of flour and 1\2 tsp baking powder.
Mix in nuts if desires. Pour in an 8" pan and bake at
350. Frost while hot with chocolate icing.
Hershey's Chocolate Fudge
3/4 cup Hershey's cocoa
3 cups sugar
2 tablespoons cornsyrup
l l/2 cup milk
1/8 teaspoon salt (optional)
1/4 cup butter or margarine
1 teaspoon vanilla
Thoroughly combine day ingredients in a heavy 4-qt.
saucepan; stir in milk. Add two tablespoons of
cornsyrup. Bring to a bubbly boil on a medium heat,
stirring constantly. Then let boil without siring.
Test by putting a little fudge in a glass of cold
water. You can tell the fudge is ready when you can
form a ball after you have put it in cold water.
Remove from heat add butter and vanilla. Beat until
it starts to thicken and looses some of its gloss.
Quickly spread on a buttered dish. (you can add nuts
to this recipe if you like)
The secret to making old fashion fudge is that when
you test the fudge you never put a wet spoon back
into the fudge mixture you are cooking. It adds
moisture and takes longer for it to cook down. Always
use a dry spoon. The corn syrup helps it to set up.
MEAT DISHES
Chili con Carne
INGREDIENTS:
2# lean ground beef
2 cans cheddar cheese soup
4 cans of tomato sauce
1 large onion chopped
Spices:
garlic powder
1/4 Tsp.cumin
onion powder
chili powder
salt and pepper to taste
1/4 lb. saussage
2 cloves fresh garlic(chopped)optional
DIRECTIONS:Brown lean ground beef and sausage in a
small amount of oil. Break up into the smallest
pieces that you can. Add spices to your taste and
brown some more. Add chopped onions. Add the tomato
sauce and 4 cans of water. Simmer about thirty
minutes and the add the cheddar cheese soup. Let this
simmer at a low heat for about thirty minutes and
then add a thickener made of cornstarch. Let simmer 4
or 5 minutes. Serve with crackers or fritoes!!!!!!
IMPOSSIBLE TACO PIE
1 pound of lean ground beef
1/2 cup chopped onions
1 package taco seasoning
1 4oz can green chilies
1 1/4 cup milk
3/4 cup bisquick mix
3 eggs
Toppings:
grated cheese
olives
lettuce
sour cream
salsa
1. Brown beef and onions, drain and add taco mix.
2. Mix in a bowl(milk, bisquick, eggs until the
mixture is smooth
3. Spread beef out in bottom of a pan, then spread
green chilies over the beef mixture.
4. Pour bisquick mixture over the meat.
5. Cook on 400 degree for 25 to 35 minutes. Take
out when knife is clean then spread cheese over the
top to melt.
Sloppy Joes(rave's recipe)
1 lb hambuger
1 can chicken gumbo soup
ketchup and mustard to taste
brown hambuger, stir in soup and ketchup and mustard.
simmer 5 minutes.
this recipe tastes even better if you put pink sauce
on the buns before putting on the sloppy joe mix.
pink sauce is made by mixing ketchup and miricle
whip.
Italian Soup
1 lb hambuger
1 medium onion diced
3 carrots diced
2 or 3 stalks of celery diced
2 cloves of garlic minced
1 16oz can of tomatoes (undrained)
1 15oz can of kidney beans (undrained) can also use 1 cup of cooked beans just use the water off of the cooked beans
1 qt of water or enough to almost fill your pan
about 2 tsp Italian seaoning or to taste, parsley flakes, oregano, and basil can also be used
salt and pepper to taste
2 c. shredded cabbage
1 15oz can green beans drained
1/2 cup macaroni
brown hambuger and onion. Drain. Add all the ingredients except the cabbage, green beans and macaroni into big pot. Bring to a boil. Lower heat,cover and simmer for 20 min. Add cabbage, green beans and macaroni. Bring to a boil and simmer until vegetables are tender.
POTATOE DISHES
Scallop Potatoes and Sausage
6 Medium Potatoes
1 can cheddar cheese soup
small onion chopped
1 can canned Milk
10 Link sausages
Peal the potates and cut them into slices. Dice the
onions. Cook potatoes and onions in a pan of water
for about seven minutes. Remove and drain the water.
Add the cheddar cheese soup. Add link sausages. Bake
in the oven about one hour at 350 degree. You can
also bake in a microwave about 20 minutes.
Microwave Potatoes
8 potatoes peeled
1 small onion chopped
1/2 cube of butter
spices(anyones you like) we use season salt, lemon
and pepper, Mrs Dash
salt and pepper
cubed potatoes. put into microwave safe dish. add
onions and spices. stir. put butter on top. microwave
on high for 6 min. stir. and repeat until potatoes
are done.
