Lobster or Crab Omelet

4 eggs
1 tablespoon onion - minced
1 tablespoon celery - minced
1/2 tablespoon bell pepper - minced.
3 tablespoon. butter
3/4 cup cooked lobster - diced or crabmeat
Salt and cayenne pepper to taste.

Saute the oinion, celery, and bell pepper in the butter.
Add lobster or crabmeat and simmer for 3 minutes.
Beat the eggs and cook in an omelet pan over medium heat.
Before folding the omelet, spread it with the mixture.
Fold and serve garnished with parsley.
