Squirrel Cakes

 3 squirrels
 2 tablespoons bread crumbs
 1 onion, fine-chopped
 1 tablespoon catsup
 1/2 cup mashed potatoes

 Parboil squirrels in salt water for about 15 minutes, then remove
all the good meat. Grind bits of meat and blend with the bread
crumbs, onions, catsup, and mashed potatoes. Mix well. Shape
into small flat  cakes and sauté' in hot bacon fat until well browned. 

Serves 4.
