Roast
Beaver ~ modern
1 med.
Beaver, about 8 lb.
1/2 C. vinegar
1 T. salt
2 tsp. soda
1 med. onion; sliced
4 strips bacon or salt pork
1/2 tsp. salt
1/4 tsp. pepper
Wash beaver
thoroughly with salt water then let soak overnight in
enough cold water to cover. Add 1/2 cup vinegar and 1 T. salt to the
water.
The next
day, remove the beaver from the brine, wash and cover with a
solution of 2 tsp. soda to 2 quarts water. Bring to a boil, reduce heat
and simmer 10 minutes.
Drain, then
place beaver in roasting pan. Cover with sliced onions and
bacon; season with salt and pepper. Place lid on roaster and bake at
375 F. until tender. Serve with a tart jelly.
