MASHED SWEET POTATOES WITH MAPLE SYRUP
Goes with Cardamom Rack of Lamb

2 1/4 lb. sweet potatoes, peeled, cut into 1" pieces
1/4 C. (1/2 stick) butter
2 T. pure maple syrup
1/2 tsp. ground cardamom

Cook potatoes in pot of boiling salted water until tender, about 20 minutes. Drain. Return potatoes to pot; mash. Mix in butter, syrup and cardamom. Season with salt and pepper.

Yield: 4 servings.
