Cabernet Sauvignon -

These two grape varieties
are easily the most recognized within the Wine World today. First to be
recognized was the Cabernet Sauvignon because it is the main variety used
in France's famous Medoc vineyards found in Bordeaux. It is this
grape variety that has been the main reason for the wine explosion on the
part of the consumer. It is also the first of France's great varietal wines
to be produced in our own California vineyards. Today, a California Cabernet
Sauvignon from a well know producer sell for as much money a some of the
Grand Cru Classe.
Cabernet Sauvignon -
Shiraz
These two grape varieties
originate from to different areas, the Cabernet Sauvignon is one of the
classic grape varietals from Bordeaux and the Syrah is from the Rhone Valley.
Today, with the new world techniques used in producing wines, we can blend
these two varietals making an exceptionally rich, well structured wine
with lovely fruit and a long lingering finish.
The reason we can produce
this blend is due to the varied soil conditions in the Languedoc region.
The Cabernet Sauvignon needs deeper and richer soils while less rich soils
are needed for the Shiraz. Both are available in our area but with limited
production.
