Spring flowers

We were thinking about spring and we thought about flowers and so we came up with this fruit, flower, thing.

First take your fruit and cut it into slices. Take your chocolate chips and put them in a microwave safe bowl or cup. Take the milk and pour it in with that. Put it in the microwave for 30 seconds on high, then stir. Keep putting it in and stirring until it is soupy. Take it out carefully because it is hot. On wax paper put down a cookie, spoon on some of the chocolate and put your fruit on it like the petals of a flower. Do as many as you want then put them in the refrigerator. Then when your ready to serve them you put them on a plate and put the whip cream in the middle for the middle of the flower.

Irish Soda Bread

Here is a great recipe for Irish soda bread for St. Patrick's Day. It goes great with corned beef and cabbage and you can make it sweet or plain, whatever you want. It's easy to make and you get to squish it up with your hands.

Have your grownup preheat oven to 350 degrees. In a big bowl, sift the flour, the baking soda, the sugar, the cream of tartar and salt. You cab add dried the raisins and stuff now if your want and then mix well. In a cup or little bowl mix the milk and the egg and really beat them up. Add the egg stuff to the other bowl and mix into a dough. Put a little flour on a board and drop the dough on it. Knead the dough a little and make it into a smooth round dough. Put onto a no-stick baking sheet and smoosh it down carefully all around so it's only about as thick as your thumb. Have your grownup put it in the oven and bake it for 40-50 minutes. The bread should look goldeny brown. Have your grown up take it out then let it cool off for a while.

Our Favorite French Toast

We love french toast. And we like making french toast because it is so ooey, gooey when you squish the bread in the egg stuff. And we like to put the syrup or jelly on it and eat it.

· 1 1/2 lbs. loaf of low-fat Challah (egg) Bread - cut into 1 inch slices

· 1 cup Egg substitute

· 1/4 cup Skim Milk

· 1 tblsp. Vanilla Extract

· Cinnamon and Nutmeg - to taste

· butter flavored Cooking Spray or Spray Oil

Have your grown up put your oven on warm and put a plate in there so you have someplace to put your french toast so no body can get it. In a big bowl put in egg substitute, milk and vanilla. Use a whisk and stir it around until it gets really light and fluffy. Get your grown up to heat up a pan on medium. While the pan is getting hot dip some pieces of the bread but only as much as you can get in the pan on both sides. Be really careful, the bread gets really soggy and can fall apart. Have your grown up spray the pan and you can sprinkle on the cinnamon and nutmeg. Have your grown up cook them till they are goldeny brown, then turn them over on the other side. Have them put the done ones on the plate in the oven until everyone is ready to eat.

Thanksgiving Rolls

These rolls taste good and you can put butter or margarine on them. They taste so yummy because you get to roll them out with the rolling pin. We make the dough for these in the bread machine but you can make them without one.

Put the water in first and then you sift the flour into a bowl or big measuring cup. Pour the flour in on top of the water. Then you measure in the sugar and sprinkle the salt. The yeast goes on last. Then put it in the bread machine and push the button for french bread if you have it, white bread if you don't. If your not using a bread machine, proof yeast in water, mix the dry ingredients in a big bowl, make a well, add yeast mixture and to it and kneed well. Then let rise until doubled. When it's done, put it on to a board with some flour. Use the rolling pin to roll out in a rectangle (about 1/4 inch thick). Roll it up like a snake from the long side. Get your grownup to cut it into small rolls. Put them on a baking sheet and let it rise until it's 2 times the size. Preheat the oven to 425 degrees. Then you spray them with a little spray margarine and bake them for 15 minutes or till they are golden.

Here are two great recipes for Halloween!

Marshmallow Cookie Spiders

First you take the cookie and put in on the plate. Then take the toothpick and make 8 deep holes in the sides of the cookie. You take the licorice and push it in the holes for the legs. And then you if you want to use the candy, glue them on with the icing for the eyes. Or you can just use the icing.

Ghost Pops

Peel the banana and chop it in half. Push a Popsicle stick in half way. Wrap each one in plastic wrap and put it in the freezer for about 3 hours or until it's hard. Take the white chocolate and put it microwave safe bowl and put it in the microwave. Cook it for about one minute until it is melted. Make sure to stir it so there are no lumps. Take our your bananas and unwrap them. Dip the banana into the white chocolate. If you are having trouble you can use a extra Popsicle stick to spread on some of the white chocolate to cover any bald spots. Lay them on wax paper. Take the chocolate chips and put them on to make eyes and a mouth. Put them at the freezer again until you are ready to eat them.

Yummy Brownies

Get a grown up to preheat your oven to 350 degrees. Spray the bottom pan. In a big bowel, mix the brownie stuff and the cinnamon and nutmeg. Make a hole in the mix and put in the wet stuff. Stir about 50 times or until there is no more lumps. Add some nuts if you want to. Have a grownup help you pour it into the pan. Bake for about 28 to 30 minutes or 'til you can poke it with a toothpick in the middle and it comes out cakey. Don't cook it too long, the middle may still look a little wet but it's good. Make sure you let it get cold before you cut them out.

Chicken Nuggets

We just like chicken nuggets because they are good and they are made of chicken. We like making chicken nuggets because we like shaking the bag with the bread crumbs. We like to eat them because we can eat them with our fingers and dip them in ketchup. If you don't like ketchup just dip them in what ever you want to.

Have your grown up pre-heat the oven to 350 degrees. Spray a cookie sheet with the spray oil. First put the biscuit mix in a bowl and then put the milk or water in and stir it. Make sure that you stir it till there are no lumps and the biscuit mix is like a creamy soup. Put the bread crumbs in the bag. Dip the chicken, one at a time, into the bowl of soupy stuff and put them in the bag of bread crumbs. Shake them up really good so it's covered with bread crumbs. Take them out of the bag (even if it's gross to you) put them on the cookie pan all spread out. Have your grownup put the pan in the oven. Let them cook for 15 minutes or until they are golden brown. Then you eat them (be careful the inside can be hot! hot! hot!) with a dip.

4Th of July Cake

Our family loves this cake because it have our two favorite kinds of berries on it. It is very nice for the 4th of July because it looks like the American flag.

Make the cake with this stuff instead of the regular stuff if you want to make it low fat. Have your grown up make it like it says on the box in a rectangle pan, not a circle or square one. Let the cake get cold. Then you can leave it in the pan or your grown up can try to take it out onto a big plate or piece of card board. Then you spread the whipped cream all over the cake. Try to make it kinda smooth. Then in the top corner make a small square with the blue berries. Then on the rest make make stripes. You do this with the strawberries after you get a grownup to slice them. Tada! you have the American flag on your cake. You should put it in the fridge until you eat it or it will melt and get really mushy!

S'getti and Meatballs

In a bowl mix the chicken and the egg stuff. Then put in the bread crumbs a little, mix it some more and keep putting a little bread crumbs till it gets all stuck together. Get your grownup to boil some water in a pot. Also get them to get the water ready for the s'getties. While you're waiting make the chicken into little balls by rolling them 'round and 'round in your hands. Put them on a plate so they don't get stuck together. Then get your grown up to put them in the water for 10 minutes. After that take out the water and put in the chicken stock and the s'getti sauce so the meatballs get all covered and warmed up. When the s'getties are ready you put the meatballs and sauce on and eat them. I like it with stinky cheese (parmesan cheese).

S'getti Pie

This is one of our Auntie Jen's favorite recipes. We like it because we love s'getties and it has eggs. Our mom always makes extra spaghetti so we can make this s'getti pie.

Crack the eggs in a bowel and stir them. Then put in the stinky cheese and mix it really good. Then you put in the s'getti and the peas and mix it some more. Ask your grown up to heat up the pan and spray in the margarine. When it is real hot add the s'getties and eggs and stuff. Get your grown up to cook it on medium with the cover on. Cook it some 'till it doesn't look too wet. Then you turn the whole thing over like a pancake and cook it some more 'till it's all brown. Make sure you check the inside so it's not squishy. We like to eat this with ketchup.

Spring comes this month, so to celebrate have these fruit mousies because fresh fruit comes back in the spring. These fruit mousies are way more fun then regular fruit salad.

For each mousie:

Take the half pear and put it flat side down on a plate. Take the half grapes and two toothpicks and put the grapes on the mouse for ears. Then take the three raisins and stick them in for the eyes and the nose. Use the strawberries for the feet. Take the long banana slice for the tail. Attach all the parts with toothpicks.

Chocolate Dipped Hearts

This is Hillary's favorite recipe because it has strawberries and chocolate! This is so cool for Valentine's day because it looks like little hearts.

Wash the strawberries and let them dry on a paper towel. Put the chocolate chips and milk into a microwave container. Put this in the microwave and cook on high for 1 minute. Stir it, if it is still has lumpy pieces cook it again for 30 seconds. Stir it until it is a smooth sauce. Put wax paper or tinfoil on a plate that will fit in the fridge. Take the strawberries by the leaves and dip them half way into the chocolate sauce. Place it on the plate and do the rest. Put them in the fridge until the chocolate gets hard. Put them on a fancy plate that you decorate with the mint leaves. Eat them!!!!

Character Pancakes

We love these pancakes because they taste so good. These pancakes can be anything or anyone you want, it just takes a little practice. Hillary's favorite shape is the little mermaid and Ali's is Winnie the Pooh. What is yours?

In a big bowl put the stuff in and stir it with a whisk to get all the lumps out. Get a no-stick pan and have your grownup heat it on the stove. Spray it with a little oil and put the pancake stuff on with a spoon in the shape that you want. When you see little bubbles popping through turn it over and cook on the other side. Serve them with margarine, syrup, strawberry sauce or anything you like.

Holiday Cakes

These are cakes for any holidays. We make it special with our holiday cookie cutters. We like the cutting part and the sprinkles part best.

Have your grown up heat the oven and bake the cake according to the directions in a flat cake pan. Let the cake cool off. Cut out the cake with the cookie cutters and put the frosting on. Put the sprinkles on , then put on the candy and make pictures with the colored frosting. You don't have to put on the candy if you don't want to.

World Famous Chocolate Chip Cookies

I love to put the chocolate chips in this recipe. You don't have to put the nuts in if you don't like them or if you are allergic.

Pre-heat oven to 375. Mix egg substitute, vanilla and sugars in a little bowl. In another bowl mix the flour, baking powder and cinnamon and nutmeg. Make a hole in the middle and add the wet stuff. Stirring from the middle mix all the stuff up, add a little milk if it gets too thick. Add the chips and nuts. Drop spoonfuls onto no-stick cookie sheet and flatten out a little if too they are lumpy. Have a grown up put them in the oven for 12 to 15 minutes until lightly browned. Let them cool off a little before you eat them.

Chocolate Pudding

We like to make chocolate pudding because you get to take turns with the stirring and because we LOVE chocolate!!!!

First you get a pot and put the pudding mix in. Put the milk in and then you you stir it with whisk until it gets all the powder mixed in. Then get a grownup to put in on the stove on medium heat and stir the whole time until thick. Get some bowls, or ice cream dishes and pour the pudding in and wait till it cold enough to put in the fridge. You can eat it warm or cold. Some times our grandma even puts bananas in it, yummy!!!

Cheesy Scrambled Eggs

This recipe is really yummy, really fun, and really easy to make. We like to eat this for breakfast all the time.

Crack the eggs into a bowl or a big mug and stir them up with a fork. You can take turns with the other kids like I do with my sister. Break the cheese into little pieces and drop them in with the eggs. Stir this up good. Get your favorite grown-up to heat a frying pan on the stove on medium high. When the pan is hot put in the margarine or butter. Be careful it's very hot, make sure your grown-up helps you. When the margarine/butter stops bubbling pour in the eggs and cheese. Use a spatula or spoon to move it around as it cooks. When the eggs are nice and fluffy have your grown up serve them on your plates. We usually have toast with butter or margarine and maybe some jelly. This is enough for four big kids.
