Frank Stein is a professor of Occupational Therapy at the USD Medical School. Dr. Stein was on sabbatical leave at the University of Uppsala. He lectured and visited hospitals and clinics. The Swedish custom of eating pea soup and pancakes on Thursdays had its beginning before the Reformation when Sweden was a Catholic country. Being that people were not allowed to eat meat on Fridays, they would gorge themselves on "ärter och fläsk" (pea soup and pork). This was done in order to fortify themselves against the meager fare on Fridays.
