DIPS AND SPREADS RECIPES

1. Chickpea Salad - Drain and rinse 1 can chickpeas and in a bowl mash them with a fork until smooth. Add 1 teaspoon each garlic powder and onion powder, 1/2 teaspoon cayenne if you like heat, 1 teaspoon dillweed, 1 teaspoon yellow mustard, 1 Tablespoon mayonnaise or Cream Cheese or plain yogurt with 1 teaspoon lemon juice.

2. Chicken Salad - Mix one pouch Kroger cooked chicken breast chunks that are drained and pulled apart with a fork in a bowl. Add 2 Tablespoons Mayonnaise, 1 Tablespon yellow mustard, 1 Tablespoon pickle relish, 2 peeled and diced hard-boiled eggs, 1/2 cup chopped pecans, 1/2 cup cherry flavored dried cranberries (Craisins.)

3. Tuna or Salmon Salad - Mix either 1 can water-packed tuna drained or 1 pouch drained boneless skinless salmon in a bowl and flake it with a fork. Add 1 large peeled diced apple, 2 Tablespoons mayonnaise, 1 Tablespoon yellow mustard, 1 Tablespoon pickle relish, 1 teaspoon dillweed, 1 Tablespoon lemon juice, 1/2 cup shelled roasted and salted sunflower seeds, and 2 peeled and diced hard-boiled eggs.

4. Egg Salad - Peel then dice six hard-boiled eggs in a bowl. Add 2 Tablespoons mayonnaise, 1 Tablespoon yellow mustard, 1 Tablespoon pickle relish, and 1/2 teaspoon Bragg's 24 Seasonings.

5. Pimento Cheese Spread - Mix together 8 oz. softened cream cheese and 1 jar drained diced pimentos.

6. Spinach Dip - Microwave one frozen box of chopped spinach for 2 minutes on high, then squeeze it completely dry. Put it into a bowl. Add 1 Tablespoon garlic powder and 1 Tablespoon onion powder.

7. Guacamole Dip - Mash two seeded and peeled avocadoes with a fork in a bowl. Add 8 oz. soft cream cheese, 1 teaspoon each garlic powder and onion powder. and 1 Tablespoon lemon or lime juice.

8. Onion Dip - Mix 8 oz. soft cream cheese with 2 Tablespoons onion powder.

9. Pineapple, Cream Cheese, and Pecan Spread - Mix together 8 oz. soft cream cheese, 1 drained can crushed pineapple, and 1/2 cup chopped pecans.

10. Queso Dip - Use a jar of Cheese-Whiz put into a bowl and mixed with 1 drained jar diced pimentos, 1 drained can diced green chilies, 1 drained can sliced black olives, and 1 teaspoon each garlic powder and onion powder.

11. Beet Dip - In a bowl mix 8 oz. soft cream cheese with 1/2 cup beet powder. Add 1 teaspoon garlic powder and onion powder for a savory dip, or add 2 Tablespoons Grenadine Syrup for a sweet dip.

12. Pico de Gallo - In a large bowl, mix together 4 cups drained diced tomatoes, 1 diced sweet onion, 1/2 cup fresh chopped cilantro, 2 chopped jalapeno peppers, 1 peeled diced English Cucumber, with sea salt and black pepper added to suit your taste. Keep in the refrigerator until served. If there are any leftovers, add chilled V-8 Vegetable Juice to make a quick Gazpacho cold soup served with croutons over the top just before serving.

13. Refried Beans Dip - Rehydrate 2 cups freeze-dried Refried Beans or mash 2 cups cooked pinto beans with a fork. Put into a bowl, and add 8 oz. soft cream cheese, 1 teaspoon each garlic powder and onion powder.

14. Chili Dip - Mix 2 cups chili with or without beans with 8 oz. soft cream cheese.

15. Southwestern Dip - Mix together in a bowl, 1 can drained and rinsed black beans, 1 can drained corn niblets, 1 diced sweet onion, 1 can drained sliced black olives, 1/2 cup cooked diced carrots, 1 can drained diced green chilies, 1 teaspoon Taco Seasoning, 1 teaspoon each garlic powder and onion powder, 1/2 cup diced red bell pepper, 1 can drained diced tomatoes, and 8 oz. soft cream cheese.
