Skylar's Summer Carrot Candies

3 large carrots
1/2 (one half) small red apple
2 tablespoons brown sugar
3 tablespoons unbleached flour
5 crackers, the dry, crunchy kind
3 tablespoons molasses
1/2 (one half) cup Quaker oats
raisins (optional)

Peel the carrots and cut them into chunks. Size really doesn't matter at this point. Cut the apple as well. You can include the core but try to remove all the seeds. Put the apple and carrot pieces into the blender and blend for a few seconds or until finely chopped. Add the crackers and the Quaker oats and blend again until all the pieces are about the same size. Pour the molasses in and add the flour and brown sugar. Blend again until fairly smooth. There can be a few chunks of carrot but try to get it as smooth as possible. If the mixture appears to be too dry, you may add a very small amount of fruit juice. Now grease a mini muffin tin using vegetable oil (as horses are vegetarians) and flour the pan. Fill the tin with the mixture and if you like top each "candy" with a raisin. Sprinkle lightly with flour and cover with plastic wrap and put in the freezer for 3-4 hours. Serve cold.

Stuffed Carrots

1 apple
Large carrots (not baby carrots)
Sugar

Cut the ends off the carrots so that the piece is one inch long. Hollow it out. Dice the apples into very small pieces. Dice the carrot centers and mix them together with the diced apple until it's a paste. Roll the hollowed out carrot pieces in sugar. Stuff the apple and carrot paste into the large carrot pieces. Feed to your horse. Can be stored in the freezer. Kristina

Shem's Winter Warmer

1 cup equi-pellets or oats
2 cups molasses
1 cup wheaten chaff
1 cup oaten chaff
1 cup lucern chaff
1 cup bran
Hot water
Carrots and apples

Mix chaff and oats together in a bucket. In a separate bucket, mix water and molasses and pour over chaff mix. Mix it all together thoroughly. How much water and molasses you use is up to you. Add the carrots and apples. This feed can be split to use for 2 or 3 horses or just add a handful to their normal feed, because it is quite rich; and you don't want your horse to colic. My Arabian, Shem, likes this in a thick consistency like a regular feed, but my little welsh, Penny, likes it wet and runny. All the horses I've fed it to love it, and yours will too! Cobie

Apple Pulp

A favorite treat of my horses is apple pulp. A man who owns an apple orchard near us gives us buckets of the apple pulp for the horses. The pulp is what remains after you press it for apple cider we all love to drink. He hates to see it go to waste, so we pick up a huge bucket from him every week. I just thought I would share that with you. Melanie

If you have snow where you live, mix about one or one and a half cups of grain with some snow. Save it in a sandwich sized Ziplock bag and store in the freezer. 1 big can of regular flavor oatmeal
1 box Kellogg's Craklin' oat bran cereal
9 carrots
3 apples
bag of horse nibbles
large jar of grandmas molasses - room temperature
-or-
log cabin maple syrup

My retired Belgian thoroughbred cross likes this really soupy, but my girls like it better when it has a thicker consistency; so you can add more or less water to your horse's preference. CUPBOARD COOKIES

I was planning on making horse treats but found out I didn't have any molasses! So I invented these and even one of the pickiest of my horses likes them.

3 small to medium apples, peeled
3 medium sized carrots, peeled
3 tablespoons of granulated sugar
1 1/2 (one and one half) cups of uncooked Quaker oats
3 slices of plain white bread
3/4 (three quarters) cup of powdered sugar
1/4 (one fourth) cup water
1/4 (one fourth) cup of vegetable oil

These measurements don't have to be precise I know mine sure weren't!
1. Shred the apples and put them in a medium bowl. Sprinkle with 1 tablespoon of the granulated sugar.
2. Shred the carrots and combine them with the apples.
3. Pour in the rest of the sugar.
4. Mix in the Quaker oats.
5. One at a time tear apart the bread into tiny pieces and drop into the mixture.
6. Add the powdered sugar.
7. Stir in the water.
8. Stir in the vegetable oil and mix well.

If the mixture looks too thin, add more oats. If it looks too thick, add more water. Only do this about a tablespoon at a time. Oil two cookie sheets, and put the batter on them by spoonfuls. They should be an inch and a half apart. Bake for 17 minutes at 350 degrees or until golden brown. Let cool and serve them to your horse. If you have molasses, you could drizzle some over the treats; and put them in the refrigerator. Crazyhorse

Using a tablespoon, drop batter onto cookie sheet and flatten slightly to form portions about the size of a silver dollar. Bake at 300 degrees for about 1 hour. Flip and bake for an additional 45 minutes until they are dried out. Keep checking to make sure they don't burn.

HORSE MUFFINS

Ingredients:
1 ½ (one and one half) cups bran
1 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
¾ (three quarters) cup skimmed milk
½ (one half) cup molasses
2 tablespoons corn oil
1 egg, beaten

Stir together bran, flour, soda, and baking powder. Mix together milk, molasses, oil, and egg. Mix wet ingredients into dry ingredients. Bake in greased or paper lined muffin tins at 400 degrees for 15 minutes.

CARROT CRISPIES

Ingredients:
2 carrots, shredded
1 apple, chopped in small pieces
1/3 cup molasses
½ to ¾ cup bran (one half to three quarters)
salty crackers

Combine carrots, apple, molasses and bran. Mix thoroughly. Scoop a small ball on crackers. Store leftovers in refrigerator.

SIMPLE RECIPE

5 or 6 apple bits
5 or 6 pear bits
2 hand fulls of sweet feed
Mix in bucket or cup

MEADOW MUFFINS

In a huge bowl, combine the following
4 quarts sweet feed
2 cups bran or bran cereal
2 cups oats (I used Quaker oats from grocery store) *optional
1 can frozen apple juice concentrate
5-6 carrots, chopped (I use my food processor)
3 apples, chopped (optional)
2 cups raisins (optional)
1 jar molasses
1 jar Karo corn syrup
5 eggs
2-3 cups corn oil
2 tablespoons baking powder

Add flour and water, alternating until you have a cake like batter that is very chunky.

Spray muffin tins with an oil and drop by spoonfuls. They will rise a little, so don't overfill. Bake at 350 degrees F for 10-15 minutes. Cool on a paper towel.

Or you may pour batter into a large baking pan (well-greased!) to make cookie bars. Bake until center is dry and firm (probably 30-60 minutes, depending on your pan and amount of batter). Let cool overnight or for several hours. Cut into squares.

This makes a huge amount (2 grocery bags full), so you may want to cut the recipe down by a factor of 2 or 4.

AFTER RIDING COOKIES

4 cups wheat flour
3 cups oatmeal
1 egg
4 tablespoons brown sugar
3/4 (three quarters) cup applesauce
4 tablespoons oil
1/2 (one half) cup molasses
1 cup hot water

Bake at 300 degrees on a greased cookie sheet.

Mix flour, oatmeal, and brown sugar in VERY large bowl. Then add egg, oil, applesauce, and molasses. Finally, add hot water and mix well. I normally remove any jewelry and just reach in to mix like bread dough. Stirring with a large fork or spoon is too hard on my arms. Roll out the dough to one half inch thick on floured surface, and cut out shapes or press into the cookie sheet. Bake 45 to 60 minutes. Turn off oven and cut with a pizza cutter into squares and let cool in the oven overnight. My horses fight over these cookies. Karen Bodine

SWEET TOOTH MIX

1 Cup oats or oatmeal
1/2 (one half) Cup chopped carrots
1 Apple (sliced)
4 Peppermints
1 Tablespoon sugar
Mix molasses, oats, carrots, and sugar in your horse's food bucket. Lay the apple slices and peppermints on top of the mixture, and you have a quick treat for a horse with a sweet tooth! Stephanie Scilingo

JACK'S SPECIALTY

1. Slice an apple into thin round slices.
2. Get Oatmeal cookies and put however many you choose, lets say you have 3 horses, you might want to give each 4 cookies, so you get out 12 cookies and put them in twos. Then spread apple sauce over each cookie.
3. Then put an apple slice on 6 of the cookies.
4. Then put the cookies without apples on a cookie which does have a slice on it.
