Zesty Italian Chicken Pasta - this was submitted by Justin Valleau
Directions:
Get the fry pan out and cook the bacon first, that way the kitchen smells great and you're hungry already.... Fry it till it is CRISP. You want it to break apart in your fingers, when you go to use it. Pat it dry with paper towels and move on.
Split the chicken breasts, so they are thin and will cook faster. You will be grilling them, so you don’t want them to dry out or be undercooked.
Fill a pot with cold water and put it on to boil, for the noodles.
Cook your chicken on a grill. I use one of those Teflon coated electric counter top varieties, easy to clean and easy to cook on. You want to cook the chicken thru and give the outside a nice grilled look (golden brown to dark brown grill marks).
When the water boils, add your noodles. You only have to cook them at a rapid boil for about 3-5 minutes, that’s all.
While all this is going on, mix the Italian Dressing, Mayonnaise and half of the Parmesan cheese together in a dish. I use a fork for mixing. Mix till the Mayonnaise is dissolved into the dressing. Now crumble the bacon into the sauce. This is my (fake white sauce). I hate real white sauce…
By now the noodles should be done. Drain them and mix in some butter (enough to keep the noodles from sticking together ok? Hey a 1/4 stick is more than plenty.) Spread the noodles out onto the serving dish.
The chicken should be done as well, so cut it up into ¼” pieces (Careful!, It's Hot!) and spread it on top of the noodles. Pour your sauce over the chicken & noodles and sprinkle the remaining half of Parmesan cheese on top.
There you have it, my creation. It’s simply delicious! You may want to serve it with Garlic bread. I like to have a vegetable on the side too, usually Broccoli and Cauliflower.
