Fusilli

• 16 oz fusilli, spiral or other shaped dry pasta
• 16 oz mozzarella cheese, diced
• 1-1/2 c chopped fresh parsley (about 1 bunch)
• 2 c diced fresh tomatoes
• 2 cloves garlic, minced
• 1 Tblsp olive oil
• 1 tsp dried oregano (or equivalent fresh)
• 1 Tblsp dried basil (or equivalent fresh)
• salt and pepper to taste

Directions:

Cook pasta according to package directions.

Meanwhile, add diced cheese and oil to a large bowl, and stir to coat.

Add remaining ingredients, expect to pasta, and mix well.

Immediately after draining the pasta, add it to the bowl and stir to mix. Let sit for about 5 mins before serving to allow the cheese to melt.

This is best served warm and leftovers microwave quite well.
