Turkey Spinach Meatloaf

Ingredients:

10 oz. package of frozen chopped spinach (thawed)
5 slices of white bread dried and made into crumbs (sourdough if possible)
1 medium onion
1 Tbsp. oil
2 large eggs
1/2 cup milk
1-1/2 tsp. dried basil
2 tsp. salt
1 tsp. black pepper
2 pounds ground turkey (or chicken)
2 tsp. lemon juice
1/2 cup ketchup
2 Tbsp. butter (melted)

Preparation:

Pre-heat oven to 350.
Sauté chopped onion until transparent.
Whisk eggs, milk and seasonings together. Add spinach, onion, turkey, bread and lemon. Mix.
Pack into greased loaf pan and brush with ketchup.
Bake for 30 minutes. Baste with butter and continue baking for 30 minutes more, basting periodically.
Let sit for ten minutes and eat.
