Smoked Sausage Casserole

Note: Add some sautéed bell peppers, carrots and other vegetables if you want to make this a bit more colorful.

Ingredients:

1 pound smoked sausage, cut into 1/2 in thick slices
1 (28 oz.) or 2 (16 oz.) cans BBQ beans
1 Tbsp. vegetable oil
1/2 cup chopped onion
1 clove garlic, minced
1 Tbsp. prepared mustard
1 green pepper, diced

Preparation:

Cook sliced sausage in large skillet until browned. Remove from pan.

Heat oil in skillet, sauté onion, garlic and bell pepper 3-5 minutes or until tender.

Combine all ingredients into skillet and mix well. Simmer for 10 minutes.

Makes 6 servings.
