Ingredients:
6 medium to large sweet potatoes, cooked until very soft.
1-1/2 cups sugar
4 large eggs, beaten
2-15 oz. cans evaporated milk
1 tsp. vanilla
1/2 tsp. ginger
1 tsp. nutmeg
2 tsp. cinnamon
2-9 inch deep-dish piecrust
Preparation:
Pre-heat oven to 400 degrees.
In a large mixing bowl, mix cooled sweet potatoes until almost all the
lumps disappear. Add sugar and eggs. Continue to mix until smooth. Add
vanilla and seasonings to mixture.
Slowly add each can of milk stirring by hand. When fully mixed pour
into the pie crusts.
Bake at 400 degrees for 15 minutes, then lower to 350 degrees for at
least 40 minutes. Time may vary. Pie is done when knife is inserted
into the center and comes out clean.
