Ingredients:
2 cups vegetable oil
1 cup sugar
2 cups brown sugar
5 cups oatmeal
4 cups flour
1 tsp. salt
4 eggs
2 tsp. baking powder
2 tsp. vanilla
2 tsp. baking soda
2 Tbsp. cinnamon
1 cup dried cranberries
1 tsp. nutmeg
1 cup chopped walnuts
1/2 tsp. cloves (ground)
1 cup toffee chips
Preparation:
Cream together oil and sugars. Add eggs and vanilla.
Put oatmeal in blender and process until nearly powdered. Mix with flour,
cinnamon,
nutmeg, cloves, salt, baking powder and soda. Slowly add to sugar and oil
mixture.
Stir in cranberries, walnuts and toffee chips.
Drop teaspoon-size balls onto ungreased cookie sheet. Bake at 375 degrees for
12 to 14 minutes.
Makes about 9 dozen cookies.
