Ingredients:
One roasting chicken (5 1/2 lbs.)
1/4 cup margarine
3 cloves garlic
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. honey
1/4 tsp. yellow or brown mustard
1/2 tsp. basil
1/4 cup lemon juice
Preparation:
Combine all ingredients, except chicken and smooth to a soft
mixture.
Take the breast skin of the chicken and move your hand under
the skin to tear all tissue. Use paper towel to dry. With
your hand, take the mixture and rub under the skin onto the
meat of the chicken and as far as you can go without ripping
the skin. Bring the skin back and if needed use toothpicks
to hold in place.
Rub the skin on all sides with margarine and lemon.
Cover with aluminum foil and bake for 30 minutes at 450 degrees,
take off aluminum foil and bake for an additional 45 minutes at
350 degrees.
Serve with lemon, or a sauce of mustard, mayo and lemon.
