Note: Adding cinnamon enhances flavor.
Ingredients:
1 cup flour
1/2 cup sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
3 medium ripe bananas, mashed (1 1/3 cups)
1 1/2 cups bran flakes
1/4 cup chopped walnuts
Preparation:
Heat oven to 350 degrees.
Mix flour, sugar, baking soda and salt in large
bowl and set aside. Beat eggs in small bowl;
stir in bananas.
Add to flour mixture; stir just until moistened.
Batter will be lumpy.
Stir in bran flakes and nuts. Spoon batter into
greased muffin pan and fill each cup 2/3 full.
Bake at 350 degrees for 30 minutes or until
golden brown.
Serve warm.
