Cajun Twice Baked Potatoes

Ingredients:

5 pounds of baked potatoes
1/2 cup butter
8 oz. cream cheese
16 oz. sour cream
1 pound bacon, fried until crisp
green onions, chopped
1/8 cup of hot sauce (or to taste)
salt and pepper to taste
1/2 pound cheddar cheese, grated

Preparation:

Bake the potatoes, cut in half lengthwise and scoop out the insides, saving the skins.  Mash the insides and add the butter, sour cream, and cream cheese.
Add the onions and the crumbled bacon to the mashed potato mix. Add hot sauce. Salt and pepper potatoes to your liking.
Place the potato skins on in a greased 13x9 pan and scoop in the potato mixture.
Top with cheese and put bake in oven at 375 until the cheese browns.
