Ingredients:
2 eggs
1/2 cup flour
1/3 cup of oil
1 lb. boneless chicken
4 oz. butter
1/2 cup of white wine
2 Tbsp. lemon juice
1/2 cup Parmesan cheese
1 package frozen spinach
Salt and Pepper to taste
Preparation:
Combine the eggs, salt and pepper in a bowl and beat well.
Dredge the chicken into the flour and then into the eggs.
Heat the oil and butter in the skillet at a medium high heat.
Place each piece of chicken into the oil and brown on each side
until golden brown.
Add the lemon juice and the wine until it starts to evaporate.
Add 1/2 cup of water or more flour to make more gravy.
Simmer until it forms a light gravy.
Cook spinach as directed on the package.
Drain and put it on a platter and pour the gravy over the spinach
and sprinkle with grated Parmesan cheese.
Place chicken on top of spinach
