Note: Now don't freak out about the lack of measurements. The amount of chicken, onion, cucumber and apples depends on how many you need to feed and how much you want to load on to the tortilla. When it comes to the dressing, start out with smaller and gradually work up. If the dressing is too thick, add a little lemon juice. If the dressing is to thin, add some sour cream and mayo.
Ingredients:
Boneless, skinless chicken breasts, grilled
Red onion
Cucumbers
Apples
Sour cream
Mayonnaise
Lemon juice
Coriander, to taste
Cumin, to taste
Flour tortillas or pita
Preparation:
Grill the chicken and cut into small pieces.
Chop red onion, cucumber, and apples, and mix in a bowl.
In a separate bowl, mix a couple tablespoons of sour cream and a couple tablespoons of mayo (amount depends on how many you are serving and how much chicken you have). Add a bit of lemon juice to make it a bit syrupy. Add coriander and cumin to taste.
Roll all ingredients into a flour tortilla or pita and add sour cream/mayo
mixture.
