Arizona Chili

Note: For a lighter version, discard the grease and use lean steak.

Ingredients:

1/2 pound of bacon
1 box of Spanish style or Mexican style rice (the kind that comes with a seasoning packet)
1 can of corn
1 can of Sloppy Joe mix
1 can of kidney beans
10-12 drops of hot sauce
2 Tbsp. of mild chili powder
1 tsp. of salt
1-1/2 pounds of tender steak
1/4 cup of pancake batter, prepared according to the box

Preparation:

In a skillet, cook the bacon until very crisp.  Set aside, but leave the grease in the pan.

In a saucepan, cook the rice but do not add the seasoning packet.

Put the rice, seasoning, corn, sloppy joe mix, kidney beans, hot sauce and chili powder in a pot.

Crumble the bacon and add to the pot.

Mix thoroughly.  Set aside.

Chop meat into small pieces.

Fry the meat in the bacon grease.  Drain.  Discard the grease.

Add the meat and pancake batter to the pot.

Stir constantly over low heat until somewhat thickened.
