Ingredients:
1 pound fettuccini pasta
1 Tbsp. olive oil
1 clove garlic, minced
4 oz. blue cheese, crumbled
1/4 cup grated Parmesan cheese
2 cup heavy cream
1 Tbsp. Italian seasoning
salt and pepper to taste
Preparation:
Bring a large pot of lightly salted water to a boil. Add pasta and cook for
8 to 10 minutes or until al dente; drain.
Meanwhile, saute garlic in olive oil in a small skillet over medium heat until
golden. Set aside.
In a medium saucepan over medium-low heat, combine blue cheese, Parmesan cheese
and
cream. Stir until cheeses are melted and thoroughly combined. Stir in the oil
from the garlic pan (but not the garlic pieces), the Italian seasoning and the
salt and pepper.
Toss sauce with hot pasta and let stand 5 minutes before serving.
Makes 6 servings.
