Our Favorite Recipes
Here are some recipes Will and I have come to enjoy. Some are vegetarian, and the others I am sure you can make vegetarian by adding veggie meat. I hope you like them as much as we do.

Shepherd's Pie-

A hearty, tasty and easy meal. Probably not so low in fat. Yet, a nice meal once in a while.
Ingredients: (for a 2 Qt. glass dish, serves 4)
2 large potatoes
1 lb. hamburg
1 can of corn
1/2 stick of butter
1/2 cup of milk
onion salt, garlic salt and pepper to taste
Take your hamburg and season with the onion and garlic salt while browning. Peel, and cut up your potatoes and put them in boiling water for about 10 minutes or until they are soft. After your meat is fully cooked, degrease your meat and put it in the bottom of your glass dish and spread your corn on top of it. You should now have two layers. When the potatoes are finished, drain and put back into the pot. Add your milk, butter and salt and mash until it is lump free. Once satisfied with your tasty potatoes spread on top of the meat and corn. If you want to eat it right away place in the over for about 15 minutes at 350 degrees. Also, you can place in the fridge and pop it in the oven when you are ready to eat at 350 degrees for about 20 minutes or until warmed. It's that simple.
Eldorado Casserole-

Another real easy meal. Its got a nice flavor and a good crunchy texture. It's like a Mexican lasagna, everyone should like it. (Sorry the picture isn't centered, I just wanted to show you what a clean stove I have... kidding.)
Ingredients: (for a 2 Qt. glass dish, serves 4)
1 lb. hamburg
1 bag of Doritos
8 oz. sour cream
1 10 oz. can of diced tomatoes and chiles (salsa works good too)
1 bag of monterey jack and cheddar shredded cheese
olives (optional, I don't care for them)
Brown your meat and degrease. While still in the pan add your tomato paste. Mix around until well blended and let sit on low heat. Take your bag of Doritos and crunch them all up. Layer some chips into your dish, and add half your meat, and layer again with some of the chips making three layers. Now, mix up your sour cream and salsa mix, add all of that making a fourth layer, and top with the shredded cheese. Add more chips and the rest of the meat, and finish off the chips on top of that. Now you should have eight layers and dump the rest of the shredded cheese on the chips. Now just pop in the oven until your cheeses are all melted, around 15 minutes. Viola', you have made your first Eldorado Casserole.
