Sole Amandine
can double sauce if you want some for adding to vegetables. |
Sole Armandine
INGREDIENTS:
2 fillets of sole, orange roughy
or any good white fish
¼ cup flour
1teaspoon paprika
2 tablespoon oil
1/4 cup butter
2 tablespoon lemon juice
¼ teaspoon hot pepper sauce
(Tabasco)
½ cup toasted slivered almonds
DIRECTIONS:

Preheat broiler and toast
almonds on foil until lightly browned. Remove and set aside.

In small saucepan melt butter,
add lemon juice and pepper sauce. Heat through but don’t boil.

Rinse fish and pat dry. Mix
flour and paprika and coat all fish pieces. Line a broiler pan with
foil and spray with Pam (cooking spray).
Arrange fish fillets on foil and brush lightly with oil. Broil fish 2
to 3 inches from heat 5 to 8 minutes until lightly browned and flaky.
Don’t turn during broiling.

Place fish on platter and pour
butter mixture over and sprinkle almonds on top.
Serves 4 to 6 depending on
appetites.
