Shrimp Quesadillas

Shrimp Quesadillas

INGREDIENTS:

4 flour tortillas

Salad shrimp (as much as you want), cooked

Cheese (any kind, as long as you use a lot of it)

Non-stick cooking spray or (if you are feeling unhealthy, use real butter- tastes better)

Sour cream

Chilli Salsa or hot sauce


DIRECTIONS:

  1. Spray a skillet with cooking spray, or melt enough butter to coat the bottom of the pan
  2. Lay tortilla flat and heat on medium for about thirty seconds.
  3. Flip it over and add grated cheese, shrimp, sour cream and salsa or hot sauce to one half of the tortilla. 
  4. Fold tortilla in half and cooked till slightly browned on one side, then (carefully) flip it over.
  5. When it is browned on the second side, serve it.  It can be sliced in half or thirds if you prefer.
