Queen Elizabeth Cake


Ingredients:

For Cake:
1 cup of dates
1 cup of boiling water
1 teaspoon of baking soda
1/4 cup of butter
1 beaten egg
1 cup of sugar
1 teaspoon of vanilla

Mix all the above ingredients and then add:

1 1/2 cup of flour
1 teaspoon of baking powder

Mix well and cook in an ungreased pan at 375F for 40-45 min.

For Icing:
10 tablespoons of brown sugar
1 cup of shredded coconut
4 tablespoons of condensed sweetened milk
6 tablespoons of butter

Stir and bring to a boil until it thickens, about 5 minutes.

Cover the warm cake with the icing.
