Parmesan Chicken


Parmesan Chicken

Ingredients:
1 cup all-purpose flour
2 teaspoons salt
2 teaspoons paprika
1/4 teaspoon pepper
2 eggs
3 Tablespoons milk
2/3 cup grated Parmesan cheese
1/3 cup dry bread crumbs
1 broiler/fryer chicken (3-4 pounds), cut up

To Prepare:
In a shallow bowl, combine the flour, salt, paprika, and pepper. In another shallow bowl, beat the eggs and milk. In a third bowl, combine the Parmesan cheese and bread crumbs. Coat chicken pieces with flour mixture, dip in egg, mixture, then roll in crumb mixture.

To Cook:
Place in a well-greased 15-inch X 10-inch X 1-inch baking pan. Bake at 400 for 50-55 minutes or until chicken juices run clear.
Makes 4 servings.
