Lentil Sausage Stew Ingredients: To Prepare:
1 pound lentils, rinsed and sorted
9 cups water
6 chicken-broth cubes
2 sliced large cloves garlic
2 pounds all-purpose potatoes, scrubbed
1 pound fresh kale or spinach leaves (or 10 oz box frozen)
12 oz sliced turkey kielbasa
1. Put lentils in a large pot with water, chicken-broth cubes, and garlic. Bring to a boil, reduce heat and simmer 5 minutes. Add potatoes, cut in 2-inch chunks. simmer 10 minutes or until almost tender.
2. Stir in kale (or spinach) leaves, chopped. Cover and simmer 10 minutes or until lentils and vegetables are tender. Stir in turkey kielbasa. Heat through.
Makes 6 servings.
