Jamaican Jungle Bread Ingredients: To Prepare:
1 1/2 cups all-purpose flour
1 cup 3-minute brand quick oats
1/2 cup granulated sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup flaked coconut
1/2 cup toasted nuts, chopped
1 cup mashed bananas (abot 3 medium)
1 (8 oz) can crushed pineapple, undrained
1/4 cup vegetable oil
2 eggs
1.In large bowl, stir together first 9 ingredients.
2. In medium bowl, mix bananas, pineapple, oil, and eggs; add all at once to oat mixture.
3. Stir just until liquid is absorbed and mixture is thoroughly moistened (do not overmix).
4. Pour into greased 9 X 5 X 3-inch loaf pan.
5. Bake at 350 for 50 minutes. Cool in pan 5 minutes, then remove from pan and cool completely on rack.
Makes 1 loaf.
