Fruit Salad Cake


Ingredients:

For Cake:
2 cups of flour
2 teaspoons of baking soda
1 1/2 cup of sugar
1/2 teaspoon of salt
1 egg
1 19oz can of fruit salad
1 teaspoon of vanilla

Mix flour, baking soda, sugar and salt. Add the egg with the can of fruit salad (juice included) and the vanilla. Stir well and pour into a greased pan.

For Garnish:
1/2 cup of brown sugar
1/2 cup of shredded coconut

Mix and spread on top of the cake batter. Cook at 350F for 30-40 minutes.

For Icing
1 small can of sweetned condensed milk
1/4 cup of butter
1 cup of sugar

Stir and melt over a bain-marie (double boiler).
Pour over cake while the cake is still hot.
