Emma's Stuffed Zucchini


Emma's Stuffed Zucchini

Ingredients:
- 1 large or 2 medium zucchinis (slice in half and scrape out the insides)
- 1 pound of ground meat browned
- 1 small chopped onion
- 2 cups rice (your choice)
- 1 can Rotelle tomatoes
- 1 large can diced tomatoes
- chili powder
- garlic powder
- sliced American cheese

To Prepare:
After slicing the zucchinis in 2 and scraping out the insides, place in a cake pan.

In a large bowl, mix together insides of squash, ground meat, onions, both cans of tomatoes; season with chili powder and garlic powder.
Pour in about 2 cups of water and stir, then pour in pan over squash shells.

Cover with foil and bake at 350 degrees for about 1 1/2 hours until the rice is done.

When rice is done, take out and put cheese slices all over the top and put backe in and bake until the cheese melts completely.

Let cool for about 15-20 minutes before serving.

If you are going to freeze it, do not put the cheese on before freezing.
Before reheating, put a little water in the bottom, cover and reheat for about 30 minutes or so, check the center to see how hot it is.
You may want to thaw it first.

A friend of mine said he thought it was always better the second time around because it gave the flavors a chance to 'mix together'.

You can also make it an Italian version by subbing the Rotelle tomatoes with more diced tomatoes and add Spaghetti or italian seasoning instead of Chili powder. You can even change the cheese to Mozerella or Pepper jack or anything you like. You can even make it spicier depending on how you like your food.
