Crab Cakes


The Olde Greenfield Inn crab cakes

Ingredients:
4 slices firm white bread, crusts removed
1 pound lump crabmeat, picked over
1/4 cup mayonnaise
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon ground pepper
1 Tablespoon fresh lemon juice
2 Tablespoons butter or margarine
Lemon wedges

To Cook:

1. In blender, pulse 2 bread slices to make crumbs; place on large plate. Cut remaining bread into 1/4-inch cubes.
2. In bowl, toss crab with mayonnaise, mustard, salt, pepper, lemon juice, and bread cubes just until combined. 3. Cover and refridgerate 1 hour.
Makes 8 crab cakes
Prep time: 20 minutes plus chilling
Cook time: about 10 minutes
