| 250 Grs Butter, Chopped |
1/4 Cup Rice Flour, I used |
| 1/2 Cups Caster Sugar |
-Cornstarch |
| 1 Teaspoon Vainilla Essence |
200 Grs White Chocolate, Melted |
| 2 Cups Plain Flour |

Pre heat Oven to 160ºC. line two oven trays with baking paper. Place butter, sugar and vanilla in the bowl of an electric mixer and beat until light and creamy. Add sifted flours and beat for 30 seconds until mixture begins to form a ball. Turn dough onto afloured surface and knead gently to form a smooth ball. Wrap in plastic wrap, and refridgerate for 15 minutes. Roll out dough on afloured surface to 5mm thick, and use a Christmas tree cutter or sharp knife to cut out the shapes. Place on oven trays and bake for 10-15 minutes until lightly brown. Leave in the tray 5 minutes before transferring to a wire rack to cool. Melt the chocolate over a saucepan of simmering water, or microwave on medium for 2 minutes. stir unti smooth. Fill the corner of a small thick plastic bag with the chocolate. Snip of a tiny piece of the corner and drizzle cookies with the chocolate. Leave to set. Dark or milk chocolate can be used in place of white. Or decorate with some of each
