1 Cup butter, softened 1 egg
1 Cup sugar 2 1/2 Cup flour
1 Tsp grated lemon rind 1/4 Tsp salt
2 Tbl fresh lemon juice 1/4 Tsp baking soda

Cream butter and sugar then add lemon rind and lemon juice. Add egg and beat well. Combine the flour, salt and soda and gradually blend into the butter and sugar mixture. Make 2 "logs" of dough about 1 1/2" in diameter.

Wrap logs in waxed paper and refrigerate until firm. Preheat oven to 400 degrees. Cut logs into thin slices and place on greased cookie sheet. Lower heat to 350 degrees and bake for about 5 minutes

1/2 Cup butter 2/3 Cup flour
3 squares unsweetened chocolate 1/2 Tsp salt
1 1/4 Cup sugar 1/2 Tsp baking powder
1 Tsp vanilla 1/2 Cup nuts
3 eggs

Melt butter and cocoa over low heat.
Remove from heat when melted.
Add sugar, vanilla and egg and beat well.
Add flour, baking powder and salt.
Spread in greased 9" square pan.
bake 25 - 30 minutes.
Cool.
Frost if desired and cut in squares.

2 Cup white sugar 2 Tsp soda
2 eggs 3 3/4 or 4 cups flour

Drop by teaspoon full or roll like a walnut and press flat. Bake 340 - 400 for 10 - 15 minutes.

Cream butter and sugar, add egg and mincemeat. Add flour and baking powder. Drop by tsp. full onto a greased cookie sheet. Bake 400 F for 12 minutes.

Yield 30 cookies.

Go ahead, indulge a little. You can with these sweetly spiced gems, which have less than half the calories of traditional homemade cookies such as chocolate chip. They were created by Julie Van Rosendaal of Calgary, Alberta, who lost 165 lb while eating cookies every day. Her secret? "I changed how I eat--how much and how the food is prepared--not what I love to eat," says Julie.

1/4 Cup stick margarine or butter, -1 tsp water
-softened 2 Tsp vanilla extract
1/2 Cup granulated sugar 1 Cup all-purpose flour
1/2 Cup packed brown sugar 1/2 Cup cocoa powder
1 Tsp grated orange peel (optional) 1 Tsp ground cinnamon
1 lg egg white 1/4 Tsp baking soda
1 Tsp instant coffee, dissolved in 1/4 Tsp salt

1. In a large bowl, beat together the margarine, sugars, and orange peel, if using, until well combined. Beat in the egg white, coffee, and vanilla extract until smooth.

2. In a medium bowl, combine the flour, cocoa, cinnamon, baking soda, and salt. Add it to the sugar mixture, and stir by hand just until the dough comes together. Shape the dough into a disk. Wrap it in plastic wrap or wax paper, and refrigerate for 1 hour, or until well chilled.

3. When ready to bake, preheat the oven to 350 degrees F. On a lightly floured surface, roll out the dough 1/8" thick, and cut it into 2 1/4" rounds with a cookie cutter or the rim of a glass. Place the cookies about 1" apart on a baking sheet that has been lightly coated with cooking spray. Bake for 10 to 12 minutes. Transfer to a rack to cool completely.

1 -3/4 cups flour 3 squares BAKER'S Semi-Sweet
1 Cup finely chopped pecans -Chocolate, chopped
3/4 Cup butter, softened 3 squares BAKER'S White Chocolate,
1/2 Cup icing sugar -coarsely grated
1 Tsp vanilla

PREHEAT oven to 325F. Combine flour and pecans; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Blend in vanilla. Gradually add flour mixture, mixing until well blended. Roll dough into 36 balls, each about 3/4 inch in diameter. Place, 2 inches apart, on ungreased baking sheets
BAKE 20 minutes or until edges are lightly browned. Cool completely on wire racks.
MICROWAVE semi-sweet chocolate in microwaveable bowl on MEDIUM 1-1/2 minutes or until chocolate is almost melted. Stir until chocolate is completely melted; set aside. Grate white chocolate into shallow bowl. Dip each cookie halfway in the melted chocolate, then in the grated white chocolate to create a snowy appearance. Let stand until chocolate is firm.

Make it Easy
To avoid static cling when grating chocolate, remove and discard paper wrappers from the chocolate. Place chocolate in microwaveable bowl. Microwave on MEDIUM 20 seconds to soften chocolate slightly before grating.

2 Cup buttermilk baking mix 1/4 Cup butter, melted
2/3 Cup milk 1/2 Tsp garlic powder
1/2 Cup shredded Cheddar cheese

DIRECTIONS:
Preheat oven to 450 degrees F (230 degrees C).
Combine baking mix, milk and cheddar cheese in mixing bowl. Beat with wooden spoon till soft dough forms.
Drop dough by spoonfuls onto ungreased cookie sheet. Bake 8-10 minutes until golden brown.
Mix butter and garlic powder and brush over warm biscuits before removing from cookie sheet.

These cookies literally melt in your mouth. This recipe supplied by Sharon, Canada, Oct 06

1 Cup butter 1 Cup flour
¾ Cup cornstarch 1 recipe Cream Cheese Frosting
¾ Cup powdered sugar -(see below)

In a medium bowl cream butter until fluffy. Add cornstarch and sugar and blend well. Beat in flour until thoroughly mixed. Drop by small teaspoons onto baking sheet and flatten out with the bottom of a glass. (Dip glass in powdered sugar to prevent sticking). Bake at 350 degrees F. for 10 to 12 minutes. Cool on a wire rack and frost with Cream Cheese Frosting.

Cream Cheese Frosting
1 (3-ounce) package cream cheese, softened
1 cup powdered sugar
½ teaspoon vanilla

Mix all ingredients together. Colour with food colouring if desired.
