Jedi's are guardians of the galaxy, if galactic peace is threatened Jedi's are usually there to fight for it. They are an ancient religion that beleives in the force, they weild a symbolic laser sword that defines their characteristics, the light saber.
Jedi classes
Jedi classes do not define their level of skill or power, but by the way they handle different situations. Below is the list of classes that define the Jedis by their focus of study and their way of handling situations.
Guardian: Guardians focus's on their skills with the lightsaber, they usually carry blue or purple lightsabers. Although they are still keepers of the peace, they might handle some situations a little more aggresively then other jedi. As far as their knowledge of the force, they will perform such skills as throwing their opponents off balance to jumping 30 feet into the air. By the time a guardian has reached their rank as a knight they would know all three lightsaber styles.
Counselar: Knowledge seekers, they seek to know every angle and aspect of the force. Rather than hacking and slashing their way out of situations, they would rather use mind tricks or distractions. Although their lightsaber skills are not as developed as the guardians, they can weild small ships with the force when they reach knight. They usually carry green or jade colored lightsabers, and will not bother learning any other style then single hilt.
Sentinel: Sentinels try to spend an equavilant ammount of study time with both their light saber and force abilities. They also progress alot slower than Counselars in the force, and guardians with their light saber skills. They usually carry yellow light sabers.
Jedi ranks
Jedi ranks are different from jedi classes, ranks determine their abilities and skills. Here is a list of the jedi rank progression.
Padawan: Padawan learner is the first step to becoming a strong willed Jedi, they are iontroduced to the force and only observe their masters. They know little of the force, but have the will to learn. By the time a Padawans training has ended they would have learned to move small objects and learn to trust their feelings in difficult situations. They will learn to build a lightsaber at the very end of their trial to become an apprentice.
Appentice: The learner of the force are now at the stage of choosing their focus of study, whether they become a Guardian, Sentinel or Counselar. At the end of their training, when the teacher and the Jedi council feels the time is right, the Jedi will be sent on his first solo mission, this is where they are trialed to become a Jedi knight.

Knight: You are now a complete Jedi, you hold respect from other Jedi's. After completing the trials you are now appointed on solo missions, feel others who are strong in the force yet have not learned of the force.

Master: You have mastered every aspect of your training, and you will now be assigned with a padawan of your own. The Jedi fully trust in your wisdom and skills with the force, now you can choose to be on the council or continue going on missions with a padawan of your own.

Lightsaber styles and focused force powers
Single hilt: Jedi's always begin with the single hilt style.
Dual Sabers: This is when the jedi fluidly weilds two lightsabers at once, it is the most complicated of the three styles.
Double bladed: A double bladed saber consist's of a longer hilt, almost twice as long as the normal hilt, and two blades emerge, one from each hand.
Focused force powers are unique and more advanced abilities with the force, any jedi above apprentice level can levitate and move at least mansized objects (Once counselars and sentinels hit knights level, they can move small ships, guardians can also move small ships at knight but will be exhausted after performing the task.)
