Anne's Chicken Quesadillas 1 lb boneless skinless chicken breast 1 packet taco seasoning 12 flour tortillas 2 c shredded cheddar cheese-more or less to taste Place chicken in large skillet and cover with water. Sprinkle seasoning packet over all and mix lightly. Bring to a boil and then lower to a simmer until chicken is falling apart and most liquid is absorbed. Shred chicken well. Place approximately 1/4 c of chicken over one tortilla-spread to edges. Top with cheddar cheese to taste. Top with another tortilla. Heat-turning once-in a large non-stick pan on med-high heat until well browned on both sides and cheese is melted. Serve with salsa, sour cream, and sliced black olives.
