HUMMUS PIZZA

this is a simple recipe...you can buy a pizza crust or use your own favorite pizza dough recipe.

My basic recipe:

THE PIZZA: In a food processor place,1 14 oz can of artichokes in brine (do not put the whole can in,open the can and empty the contents into the processor after you have drained the artichokes) also add 2 cloves of peeled garlic,and one third cup of mayonnaise you can use light mayo if you choose.blend all this until you have a nice paste . Add salt and a little red pepper.this will fit nicely into a 14 inch pizza crust.

ASSEMBLE THE PIZZA:

GRILLED EGGPLANT SANDWICH WITH LEMON GARLIC MAYO

Ingredients

Preheat grill

Brush eggplant with oil and season w/salt and pepper.grill eggplantin batches on a rack set 5 inches above the coals,turning once until tender.about 3 minutes.transfer to a baking sheet to cool.

In a small bowl wisk together mayo,garlic and lemon juice.

cut bread into 4 4 inch pieces and halve each piece horizontally.spread 4 halves with mayo mix.make sandwich with eggplant,feta and basil.



Mayonnaise

WARNING: the use of raw eggs can cause serious illness.Even though only one out of every ten thousand eggs carries the salmonella virus...the threat still exists.If you know who your seller is of eggs,they should be able to guarantee salmonella free eggs.

Ingredients

Set a bowl on a damp towel.Have all ingredients at room temp. With a wire wisk beat the egg yolks with lemon juice salt and pepper.Add a little hot water while beating. Continue beating until the yolks are light and lemony color. About two minutes

Now add oil a drop at a time while still beating. Then add the oil in a slow steady stream while beating,follow the rule that you can add as much oil at aa time as has been incorporated(IBM'd, Xeroxed,etc.) It is good to have a helper or you could do this in a food processor.When nearing the end of the process the mayo may become quite stiff..If it looks slippery, it may have reached its limit for oil. If the emulsion breaks up whip up a yolk in another bowl and add the broken sauce as if it were oil ...it will go back together quickly. Re season the sauce when done.If it is too thick a few drops of white wine vinegar will adjust it nicely.
