BUTTERMILK PIE (Poor Man's Cheesecake)
1 stick (1/2 C. ) butter
1-1/2 C. sugar
3 eggs
1-1/2 T. Flour
1/2 C. buttermilk
1 tsp. vanilla
2 uncooked pie shells
Cream together all ingredients (except pie shells). Pour into pie
shells. Bake at 350 for about 30 minutes or until middle is set. NOTE:
this will make enough filling for 2 pie crusts, but will only fill crust
halfful. You can double recipe and make 3 Full pies or use a single
recipe and make ONE deep dish pie.
