GREEN CHILI ARIZONA STYLE

4 lb. Chuck Roast, boneless or other

comparable meat

2 beef bouillon cubes

1/2 onion chopped

Garlic salt, pepper

Place roast in dutch oven with lid, add bouillon cubes, onion,

seasonings and 3 - 8 oz. glasses of water. Cover and cook for 3 hours at

325 degrees.

Remove from oven, let cool.

When cool remove from pan, cut into bite size pieces. Return to pan

into the gravy, or juices left. Add 1/2 of a chopped onion, 1 small can

of diced ortega chilis. Stir till mixed. On top of stove bring to medium

simmer for 20 minutes, stirring as needed. Remove from stove and serve

with warm flour tortillas to make burritos.

Serve with your choice of condiments to fill the burrito to your liking.

Yield - at least 2 dozen burritos, great to make and put in freezer for

lunches or outings.
