2 TSP. BAKING POWDER
1 TSP. BAKING SODA
3 TSP. CINNAMON
.5 TSP. SALT
1-1.5 CUPS BROWN SUGAR
2 EGGS
1CUP MILK
1/3 CUP OIL
4 APPLES PEELED SLICED
.5 cup of SKOR bits
PREHEAT OVEN TO 400F (200 C). GREASE 12 MUFFIN CUPS OR USE PAPER CUPS. USING A FORK, STIR FLOUR WITH BAKING POWDER, BAKING SODA, SPICES, SALT, SUGAR IN A LARGE BOWL. WHISK EGGS IN A MEDIUM-SIZE BOWL WITH MILKAND OIL. POUR INTO FLOUR MIXTURE. STIR UNTIL COMBINED. STIR IN APPLES. SPOON BATTER INTO MUFFIN CUPS. CUPS WILL BE VERY FULL WITH BATTER HEAPED IN MIDDLE. BAKE FOR ABOUT 15-17 MINUTES. USE "TOOTHPICK" METHOD TO TEST IF READY. COOL MUFFINS FOR 5 MINUTES THN TRANSFER TO COOLING RACKS.
