Keeping Potatoes Fresh

When stored properly, most potatoes can keep for three to four weeks.

To make sure your potatoes are the freshest and most delicious potatoes available:

1. Store potatoes in a cool, dark place at about 50 degres. Do not wash potatoes before storing, because the moisture can cause sprouting.

2. Do not refrigerate potatoes. Storage in temperatures cooler than 45 degrees converts the potatoe starch into sugar which changes the taste and causes the potatoes to darken prematurely when cooked.

3. Protect potatoes from turning green and acquiring a bitter taste by keeping them out of strong light. If a potatoe has any green spots, simply pare these areas off before cooking.

4. Potatoes are classified by shape,, skin color, or use.

5. To preserve the potatoes important nutrients, cook them in their skins. Also, the water used to steam or boil potatoes is full of nutrients. Save the water to use when making soups, gravy, or mashed potatoes.

6. Potatoes are great to eat for breakfast, lunch, or dinner. Serve them baked, mashed, fried, boiled, steamed, sliced, diced, or microwaved. Find your favorite way....the delicious possibilities are endless.

A Different Side To Our Much Loved Potatoe

Topically, "mashed" potatoe can be used to draw out toxins from boils. Raw juice improves function of digestive system and alleviates gout, heartburn and constipation, when diluted with warm water and taken in the morning it can alleviate peptic ulcers. Applying raw slices to the skin can relieve eczema. It can also alleviate red, swollen, puffy, or sore eyes, when slices are applied on them. As for the "skins", after boiled and cleaned of all pulp, they can be used as a burn dressing, even with severe or deep burns. In India, the "Potatoe" is being used with great success!
