Ingredients:
12 eggs
1 1/4 cups confectioners sugar
20 ounces brandy (approximately)
24 cups milk
freshly grated nutmeg
Directions:
1 Separate the eggs. In a large bowl beat the egg whites until frothy. Whisk in 3/4 cup of the confectioners' sugar and beat until stiff peaks are formed.
2 Beat the egg yolks with the remaining 1/2 cup of confectioners' sugar and about 4 to 5 tablespoons of the brandy until light and lemon colored. Fold the egg whites into the egg yolks and refrigerate.
3 In a large stock post heat the milk until hot but do not boil. Reduce heat and keep milk hot.
4 To each mug add 2 tablespoons brandy (or more to taste) and 1 large heaping tablespoon of egg mixture. Stir and fill mug with hot milk. Place another tablespoon of egg mixture on top and sprinkle with nutmeg.
Makes 24 servings
Christmas
Breakfast Sausage Casserole
Ingredients:
1 pound sausage
6 slices toast, cubed
1/2 pound mild cheddar cheese
1 teaspoon dry mustard
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
Directions:
1 Crumble sausage into a skillet. Cook over medium heat. Drain.
2 Mix together cooked sausage, toast, cheese, mustard, salt, eggs, and milk. Pour into a greased, 9 x 13 inch baking dish. Cover. Refrigerate overnight.
3 Bake, covered, at 350 degrees F (175 degrees C) for 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.
Makes 4 - 6 servings
Screaming Potatoes
2 pounds clean, scrubbed new potatoes
1 tablespoon Kosher salt
water
Directions:
1 Place the potatoes in the bottom of a large cast iron skillet. Place about 2 tablespoons of water in the bottom of the pot and sprinkle with the salt. Cover tightly and place over low heat. Cook for 40-50 minutes. Do not lift the lid during this time. Occasionally give the pan a shake.
Makes 4 servings
Delmonico Potatoes
Ingredients:
1 (32 ounce) package frozen hash brown potatoes
1 (8 ounce) package pasteurized processed cheese
2 cups half and half cream
1/2 cup butter or margarine
Directions:
1 Preheat oven to 350 degrees F (175 degrees C).
2 Place frozen potatoes in a 13 x 9 inch baking dish.
3 In a saucepan on the stovetop or in microwave on low, melt together cheese and butter or margarine. When melted, blend in the cream. Pour mixture over frozen potatoes, and cover pan with foil.
4 Bake for 1 hour. Remove foil, and bake 15 minutes more.
Makes 8 servings
Awesome Broccoli-Cheese
Casserole
1 can (10 3/4-ounce) condensed cream of mushroom soup
1 cup mayonnaise (reduced fat mayonnaise may be substituted)
1 large egg, beaten
1/4 cup finely chopped onion (optional)
3 (10-ounce) packages frozen cut broccoli
8 ounces (2 cups) grated sharp cheddar cheese
salt
ground black pepper
paprika
Directions:
1 Preheat oven to 350 degrees F (175 degrees C). Butter a 13x9x2 inch baking dish.
2 In a medium mixing bowl, whisk together condensed soup, mayonnaise, beaten egg, and, if desired, chopped onion.
3 Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli and mix well. Sprinkle on cheese and mix well. Using a rubber spatula, scrape and pour mixture into prepared baking dish. Smooth top of casserole using spatula. Season to taste with salt, pepper, and paprika.
4 Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour. Serve hot.
