Lemon Squares
1 can (1 1/3 cups) sweetened condensed milk
cup lemon juice
1 tsp lemon rind (lemon zest),
27 Graham wafer biscuits
whipped cream or Butter icing *
Blend milk, lemon juice and zest of lemon until mixtures thickens. Line a 8" square cake pan with wax paper . Cover the bottom with graham wafers it took me 9 to cover the bottom tightly. . Spread half of the lemon mixture to cover the wafers. Repeat the wafers to cover the lemon mixture and finish with another layer of wafers. If you lucky to have refrigeration chill for 12 hours or an ice box will do just fine. Take it out invert it on a plate unmold it and cover it with icing. Decorate if are celebrating a special event and serve.
I have also tried this recipe with orange juice instead of lemon.
