When company is expected or you need a snack to impress Royalty. This Quick crab cake recipe I am sure will please .
It calls for 8 ounces of crab.
Canned crab will do but the flavor of fresh will make the dish unforgettable.
8 oz crabmeat
White of one egg
¼ cup bread crumbs
1 shake Jamaican hot sauce
1 squeeze lemon (about a table spoon)
1 teaspoon mustard (Dijon will add a certain zip)
1 table spoon sour cream
1 teaspoon Worcestershire sauce
The crab meat should be rinsed clear of bits of shell and blotted dry of excess water.
Mix all the ingredients in a bowl and add a few bread crumbs to the mix if its too wet.
Use a teaspoon to scoop up a measured amount roll into a ball and flatten into a small cakes.
Place on a non stick cookie sheet and bake at 450 degrees for a total of 30 minutes ( 20 on one side till brown and flip over to brown the other side).
A creamy Cajun Sauce to dip in is a perfect compliment.
¼ cup yogurt
¼ cup sour cream
1 tablespoon fine chopped parsley
the juice of 1 lemon
1 teaspoon Cajun spice
